Manic Monday

Breakfast

I always start the week off with a bang! My Mondays are a little manic with four separate shifts between three jobs in two different cities. Phew!

I started off my day with a powerhouse green smoothie. I combined one apple, half a banana, a cup of baby spinach, a cup of kale, a cup of unsweetened almond milk, a scoop of vanilla protein powder, and a teaspoon of spirulina. It was a fantastic way to start the day...even if it was on the run!


Morning Snack

Between shifts, I had a little morning snack in the car. I had a hard boiled egg and sipped on a big tumbler of tea.




Lunch

I also ate my lunch in the car before the after school program. I munched on four multigrain crackers with roasted red pepper hummus...


...some celery to eat with the last little bit of hummus...


...and a container of mandarin orange Greek yogurt.

 
By the time I got home, I was pretty exhausted and just ready to put my feet up!


Dinner

Fortunately, Casey had already started making some dinner when I walked through the door. I couldn't say no to the multigrain chicken tenders that were hot and ready to eat, so I took four along with some squash and green beans.


Workout

After such a long day, I was in no mood to hit the gym. Instead, I stayed at home and did a HIIT workout from the comfort of my own living room. Here's how it went...

Full Body Pyramid Workout (3 rounds)

  • 10 burpees
  • 20 push-ups
  • 30 sit-ups
  • 40 squats
  • 50 mountain climbers
  • 40 alternating plyometric lunges
  • 30 jumping jacks
  • 20 plank jacks
  • 10 pike push-ups

It was killer, but I was really glad I got through it! And now it's time for me to get to bed. I'm officially exhausted!

  1. I had that same yogurt today for my mid morning snack. Topped it off with special K granola and blueberries, kept me going strong through lunch, awesome! - v
