I made a not-so-green smoothie for breakfast this morning before leaving for work. I combined a cup of unsweetened almond milk, a frozen banana, two cups of frozen baby spinach, and a spoonful of peanut butter. It was super delicious, but didn't turn out so green for some reason!
I had to bring lunch with me to work since I would be going right from teaching therapeutic riding lessons to another barn to teach regular riding lessons. I brought a garden salad loaded with carrot slaw and topped with grilled chicken; however, I forgot to take a picture so here is one from yesterday!
Between barns, I stopped by Starbucks to refuel with a grande caramel light frappuccino. I had a free birthday drink since tomorrow is my birthday, so I decided to treat myself to a free drink today!
Although they gave me a huge venti-sized straw, so it was difficult to drink on the road. I tried to take a picture but the straw was so long, the cup wouldn't even fit in the picture!
Before I got started with the lesson at the other barn, I also had an Enjoy Life Soft Baked Bar with a friend!
When I got home from work, I was really excited to hear that my parents were stopping by with a package that came in the mail today. It was a Lululemon Practice Freely Tank Top that I had bought off of fellow blogger and friend, Janetha from Meals & Moves. I'm so happy that it fits and I think the colour suits me really well. Thanks Janetha!
Because I was still quite hungry after such a busy day, I had an apple and a spoonful of peanut butter as I prepped for dinner.
For dinner, Casey and I really wanted to try out this Namaste Foods Gluten Free Pizza Crust Mix. It was really simple to make, you just added water and a touch of EVOO, then pop it in the oven and soon it's ready to have the toppings put on!
We topped our pizza with pizza sauce, soya cheese, pineapple and hot peppers on my half.
The crust turned out quite tasty! It had a nice crispness to it and had a great flavour. The only problem we ran into was because the soya cheese was oilier than regular cheese, the pizza crust ended up being a bit soggy in the centre. I think next time we'll just have to cook the crust a little while longer and use less cheese to avoid the problem from happening again.
After taking some time to digest our dinners, it was time for Casey and I to go to the gym. After what seemed like a very long hiatus from GPP's Workouts of the Day due to my busy schedule, I was very happy to be reunited with their awesome workouts! Today's workout was Deads & Pushups. I followed everything in the workout but substituted the 800m warm-up run with an 800m row just because!
I also finished up with a sweaty 20 minute HIIT workout on the elliptical before calling it a day. I was one sweaty, but very happy mess by the time I left the gym! It felt so great to be back at it again!
