Yesterday, I was craving pancakes when I woke up in the morning. I made three quick and simple pancakes for breakfast.
They were delicious but surprisingly filling! I ended up eating two of the pancakes and leaving the third. It was simply too much for me.
Due to my intense workout yesterday, my body was in no shape to be doing a strenuous workout. I went on a long hack with my friend Megan from The Jelly Bean Exchange that lasted roughly an hour and a half to tow hours, so I decided to leave it at that. My body definitely thanked me!
After our hack, we went out to The Root Cellar for a late lunch. I ordered orange creamsicle juice, grilled tomato and green panini on spelt bread, and kale slaw on the side. Everything was so delicious, healthy and local. I was really impressed! The only downside was the price; however, you definitely get what you pay for. The food and juice was fantastic!
Birthday Bonfire & Dinner
After our late lunch, I rushed home to shower and get ready for my birthday bonfire! Some of my best friends were able to make it and we had a fantastic time chatting, roasting s'mores and munching on delicious food. This is only a small sample of the yummy treats I ate for dinner/dessert that night!
After a late night last night, I slept in a little later than normal this morning. When I woke up, Casey and I decided to go out for a long hike with Zeke. I grabbed a CLIF Crunch Granola Bar and an apple to eat for breakfast then we headed out the door.
We spent two and a half hours hiking along the trails in Komoka Provincial Park. It was a gorgeous day for a hike and we all enjoyed every single step. We explored some less-traveled trails this time and found some beautiful areas.
When we got home, we were both hungry for lunch. I made us green monster smoothies for lunch. I blended together frozen bananas, flax milk, peanut butter, and frozen baby spinach. These smoothies were delicious, refreshing and filling...the perfect lunch after a really long hike!
I did quite a lot of snacking between lunch and dinner, so dinner got pushed back quite a bit. I attribute the snacking to my not-so-smart breakfast that lacked protein. Oh well, you live and you learn...motto of my life!
Casey and I grilled steaks on the barbeque along with some corn on the cob. The steaks were gigantic, so we ended up each eating half of them and putting the other half in the fridge for another day. I just wanted to show you how big the steaks actually were in comparison to the full-sized cobs of corn!
After dinner, Casey and I spent the night catching up on some housework and finally settling down to watch a movie. For dessert, I cut up a crunch apple and topped it with cinnamon and brown sugar. It was a delicious and simple dessert!
I have a couple of short shifts tomorrow, but we do need to get some groceries before I head off to work. I'm hoping to get to bed early tonight and get plenty of sleep tonight, especially after such a late night last night. Sleep is really important and sometimes I need to remind myself to get enough of it...in both quantity AND quality!
