Breakfast
Today was a pretty busy day! I woke up knowing I had a long day ahead of me, so I made sure to fuel appropriately. I made myself two thin gluten free pancakes using Namaste Foods Perfect Flour Blend and had a small orange on the side.
Lunch
I started off my day with a bit of cleaning and tidying before heading off for an interview and information session for a potential part-time job. It went really well, but I had a bad headache and was ready to rest by the time I got home. I made myself an easy lunch of Food Should Taste Good multigrain tortilla chips, roasted red pepper hummus, and some carrots and celery.
Fortunately, the information session had ended early so I had just enough time to rest and help my headache go away. Before heading off to work, I had some spinach and feta spanikopita as an afternoon snack.
Dinner
I had a really short shift at work and was home in under five hours. When I got home, it was time for a very late supper! Again, I wasn't feeling up for making anything too complicated, so I made myself a chicken and veggie sandwich on a whole wheat bun. Plain and simple!
Evening Snack
Despite not wanting to spend time making dinner, I was ready to put a little bit of elbow grease into making some somewhat healthy brownies! I made a teeny tiny batch of gluten free brownies and they turned out great! Here is the recipe for a full batch.
Gluten Free Brownies
-8 tbsp cocoa powder
-3/4 cup margarine (or applesauce)
-1 1/2 cups granulated sugar (or sweetener)
-8 egg whites (or 4 whole eggs)
-2 1/2 cup gluten free flour (or all purpose flour)
-1 pinch of salt
Coat a 9x13 baking pan with cooking spray. Preheat oven to 325 degrees. Melt the margarine and stir in cocoa. Add in remaining ingredients and combine until all chunks are gone. Pour batter into the baking pan and smooth out until flat. Bake for 30 to 40 minutes or until a toothpick inserted into the centre comes out clean.
These brownies turned out incredible! They weren't the healthiest recipe I've ever made, but they sure were a great alternative to your typical brownies.
They weren't too sweet or rich either, which was nice and refreshing!
Workout
I didn't have much time for a full workout today, so I got in about 30 minutes of core work while my brownies baked in the oven. Since I don't have a workout to talk to you about, enjoy these quotes to get you motivated and inspired!

Ooooh, brownies in a jiffy. I remember I went through a phase where I lived for these -- http://reilyproducts.com/products?mode=list&id=&brand=17 -- because you could make one at a time in the microwave. I also went through a phase where I obsessively made every molten lava chocolate cake recipe I could find, trying to recreate a taste of bliss I'd had at a restaurant, so keep in mind that I'm cuckoo. :)
