Breakfast
I was feeling particularly creative this morning, so I made a dozen oatmeal muffins. They were pretty simple but tasted delicious!
They turned out on the small side, so I had two for breakfast.
I also had a cup of orange pekoe tea with some International Delight Cinnabon sweetener added. Yum!
Workout
I spent my morning relaxing on the couch, but finally decided to get myself to the gym before I lost motivation altogether. I started off with a 20 minute HIIT session on the elliptical, followed by biceps/triceps/shoulders and finally about 15 minutes of stretching. I felt really strong today and powered through my workout!
Lunch
When I got back, I was ready for lunch! I made myself a big garden salad topped with trail mix and Kraft Olive Oil Fig Balsamic dressing. This is still one of my favourite salads! It's so delicious and so filling at the same time.
Shortly after my salad, I had a another muffin as well. So many muffins today! They were just too delicious to pass up!
Dinner
I spent my evening at the barn observing an assessment for a couple of new students coming into the therapeutic riding program. I had a lot of fun, but I was ready for some food by the time I got home! I made myself a poached egg for some protein, then munched on some unphotographed Food Should Taste Good multigrain tortilla chips and hummus.
Overall, I had a great day and I'm looking forward to what tomorrow has to bring!
