Try It Yourself Series: Gluten Free (Day 3)


Breakfast

I woke up today and had a big bottle of lemon water along with a very cold walk with Zeke to get my day started.


It was certainly a cold one!!


When we got back, I made myself a bowl of eggy cream of brown rice cereal with three egg whites, cinnamon and brown sugar mixed in.



Lunch

My lunch was a little odd today. I wasn't sure what to put together for a meal, so I ate apple slices with light mozzarella cheese...


...and a small bowl of scallop potatoes. An interesting combination, but it did the trick!


Dinner

I worked a late shift tonight and wasn't sure what to eat when I got home. Instead, I munched on some multigrain chips with roasted red pepper hummus while I blogged. It wasn't really a meal, but I wasn't terribly hungry anyway.


My TIY Experience
Physical - I'm feeling significantly less bloated today and it might not be directly related to going gluten free, but I feel like I have more energy than usual! Something else really strange that I've been noticing is that my level of hunger has gone WAY down! I've probably been eating about 2/3 of the volume of what I normally eat in a day. I don't know if I'm simply experiencing less blood sugar spikes previously caused by gluten or if I'm just not as hungry. Has anyone else had this experience when going gluten free?

Mental - I'm craving cereal today, but nothing that I can't handle. I found it difficult to throw a meal together in a rush as well, hence eating chips and hummus as a late dinner.

Difficulty - Still not terribly difficult and I would love to try gluten-free bread to expand my horizons a little bit!

If your going to try gluten free bread if you can find a local bakery that specalizes in gluten free products it will be much better then anything store bought. Try the farmers market!

Thanks for the input! Any recommendations on GF cereals? I've tried GF Rice Krispies before, but I prefer cereals that are a bit more filling.

Hey Bee! My most FAVOURITE and in my opinion the ultimate best GF bakery in London is called Organic Works which is on Wellington just south of Horton. It is a gluten free and vegan bakery and their food is amazing and they also sell many GF products there, I am so sad that I can't have any of their baked goods any more but I still go there for things like coconut oil and coconut flour :) check it out you will not believe it's gluten free!
