Try It Yourself Series: Gluten Free (Day 2)

Breakfast

I woke up craving cereal this morning, but I knew I had a new gluten-free food to try! I picked up this box of El Peto Products Cream of Brown Rice cereal at the grocery store and was excited to give it a try.

I made myself a cup of cream of rice sweetened with a hint of cinnamon brown sugar. I also made an over easy egg with an extra egg white on the side.

This cereal was incredible! It tasted just like cream of wheat, but with a slight hint of a rice aftertaste. Yum!

Lunch

When Casey got home from work, he made us a big pot of gluten-free chili. I helped myself to a bowl for lunch and loved every bite!

Afternoon Snack

After the gym, I grabbed a banana and two rice cakes with peanut butter for my afternoon snack. Unfortunately, the rice cakes went unphotographed!

Dinner

After a short class and a long bus ride home, Casey and I made dinner. I had a chicken breast with some gluten-free sweet potato fries on the side.

Everything tasted really good and the chicken was extremely juicy. Thank you George Foreman!

Evening Snack

As I sit here and blog, I'm snacking on a small amount of peanut butter protein cookie dough (peanut butter and vanilla protein powder mix) topped with a hint of chocolate syurp. It looks like a lot, but I sweat it's a very small serving! Pictures distort portions so easily.

Workout

I got in such a great leg workout today! Just before I headed off to school for class, I headed over to the gym to get my sweat on. I did the following strength workout before hopping on the elliptical for a 15 minute cool-down.

Leg Day (3 sets, 10 reps / 1 minute cardio interval after each set)
  • Weighted Bosu Ball Squats / Bosu Burpees
  • RDLs with Step Up / Running Step Ups
  • Leg Press / Jumping Jacks
  • Sumo Squat with Kettlebell / High Knees
This workout left my legs shaking and it felt amazing. I love quick and efficient workouts!

My TIY Experience
Physical - I felt slightly less bloated today than I usually do. I didn't notice any other physical changes, although I'm feeling optimistic that if I'm feeling slightly less bloated now, who knows how I'll feel in another five days!

Mental - I'm still excited to continue this diet, so I wasn't too challenged by the change. That being said, I did miss cereal this morning! I was craving a bowl when I woke up, but I didn't have any on hand. Oh well, my egg and cream of rice was equally delicious!

Difficulty - Again, it wasn't too much of a challenge. I just stuck with foods I knew were safe!

And now onto day 3!

Hey! If you ever want to talk gluten (or grain!) free, I'm open ears. We're having an "eat by design" seminar on the 5th of february if you're interested! Deciding to opt out of grains has been...AMAZING! :)

Thanks Cheryl! I really hope I can make it, I just have to wait and see when I work that day. :)
