Horsey Sunrise

Workout

I wasn't very hungry when I woke up this morning, so I grabbed a handful of cereal to munch on and headed straight out to the barn to ride. Ginny was very happy to see me, despite her angry pose below!


There's nothing better than waking up early to ride as the sun rises. What a beautiful way to spend the morning!


Breakfast

When I got home from my ride, I was pretty hungry for breakfast! I made myself one over easy egg with one extra egg white added in and seasoned with sea salt and pepper. I also made some Pillsbury Low Fat Crescents and some extra thin slices of bacon.


I ended up eating all of my egg, only two small strips of bacon, and two croissants.


I also drank two tall glasses of lemon water throughout the afternoon to stay hydrated.


Lunch

Because my breakfast was so late, I didn't end up having lunch until close to 4pm. I made myself three small protein pancakes by adding in half a scoop of vanilla protein powder into regular instant pancake mix. Don't be fooled...that's a snack-sized plate! The pancakes were only about 3-inches in diameter.


I topped them with a bit of light pancake syrup for sweetness.


Afternoon Snack

I brought a baggie of carrots with me to work to get in SOME veggies today! We're running low on fresh food, so our vegetable supply is almost on empty.


Dinner

After work, I got a little bit creative in the kitchen. I made a dozen blueberry oatmeal muffins and ate two of them for dinner. I'll share the recipe with you tomorrow, so stay tuned!


That's about it for today! The three of us will be heading out to my parents house tomorrow for the afternoon. I can't wait to see them again--it feels like it's been ages!
