Blueberry Oatmeal Muffins

Breakfast

As promised, here is the recipe for the delicious muffins I stayed up so late last night to make!

Blueberry Oatmeal Muffins (adapted from Skinny Taste)
-1 1/2 cups instant oatmeal
-1 cup unsweetened almond milk
-1/2 cup brown sugar, packed
-2 tbsp honey
-1/2 cup unsweetened applesauce
-2 egg whites
-1 tbsp oil
-1 tsp vanilla extract
-1/2 cup whole wheat flour
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp salt
-1 cup fresh blueberries

Preheat oven to 400 degrees Celsius. Line a muffin tin with liners and lightly spray with oil. Place oats in a food processor and blend until oats begin to look like chunky flour. Soak oats in milk and set aside. In a medium bowl, combine brown sugar, honey, apple sauce, vanilla, egg whites, and oil. Mix well. In a third bowl, combine whole wheat flour, salt, baking powder, and baking soda. Whisk to combine. Combine oats and milk with sugar, and applesauce mixture. Mix well. Slowly add in the dry ingredients and mix until just incorporated. Fold in blueberries. Spoon into the muffin tin and bake for 22-24 minutes. Enjoy!



I had two of these bad boys for breakfast this morning. They were amazing!


Lunch

After breakfast, Casey, Zeke and I headed out to my parent's house to celebrate my grandfather's birthday. We munched on some cheese and crackers for lunch.


Dinner

When dinner time rolled around, there was a wide selection of delicious goodies to enjoy! I had half of a barbeque chicken breast, green beans, a small baked potato, butternut squash, a broccoli chicken casserole, and some light Caesar salad. I wasn't able to finish this all, but I did my best to try everything on my plate!



For dessert, we had blueberry walnut coffee cake and vanilla ice cream. It was incredible, but I was about to burst by the time I was finished. I was sure Casey would have to roll me home afterwards because I wouldn't be able to fit into the car.


And now, I'm relaxing with my lovely friends and watching The Golden Globes! I better get back to it...

That dinner looks delish! Props to you for baking. I'm more of the "I'll just eat an apple and some nuts" kind of person. cough cough lazy.
