I woke up this morning with a craving for eggy oats. I made myself a big bowl to keep hunger at bay all morning. I combined 1/3 cup of instant oats, 1/2 cup of egg whites, a splash of water, cinnamon and brown sugar.
I microwaved the entire thing for 2 minutes, stirring halfway through, and voila!
I'm going to call this meal "second lunch" because breakfast was at 5:30am and I was hungry for my first lunch around 11am. I brought cinnamon raisin bread along with some veggies and dip to eat during class, but I was hungry for my second lunch by the time I got home from school around 3:30pm.
So, I made myself yet another nacho pizza!
I used two small ancient grains tortillas and topped them with red onion, orange bell pepper and light mozzarella cheese. Once they were baked to a slight crisp in the oven, I dipped the "nachos" in endless amounts of extra chunky salsa.
I suppose second lunch might have been part of dinner, so I'm not sure what this meal is! After my therapeutic riding lessons, I buckled down and got in some homework before riding Ginny. I sipped on some tea to warm up as I studied and ate some Smart Pop popcorn.
My workout today was riding (my favourite workout).! I hung out with Ginny all evening! I cleaned her tack, brushed out her very knotty tail, cut her mane, and gave her lots of love!
She was one
Oh, and this little guy, Charlie, hung out in my locker while I spent time with Ginny. Perhaps he was guarding my belongings or maybe he just found a new home?
All in all, it was a busy but productive and fun day. Although I can't wait to go to bed...
