Wordless Lunch







Saturday Morning Grub

Nothing like a fruit salad and Red Path hot cereal for breakfast on a Saturday morning!


I whipped a bit of peanut butter and agave nectar into my hot cereal, which made it light and fluffy. It was delicious!



I also enjoyed a side of fruit salad, consisting of strawberries, grapes and half a banana. The grapes were so juicy and stole the show.



Casey and I are heading out to the barn so I can ride and he can meet my new horse Ginger. Although he doesn't love horses as much as I do, he loves me enough to learn more about them and visit the barn with me. Personally, I think they're starting to grow on him. Best husband ever!

Unphotogenic Foods

Where on earth did all that snow come from? It came down so suddenly this afternoon and just as quickly as it came, it was gone...vanished into thin air rain. What strange weather we are having here in Canada.



Casey and I had strew tonight for dinner. I wish I could say we made it ourselves, but we picked it up from Remark Fresh Market. All we had to do was throw it in the oven for half an hour and voila! We do plan on making our own over the next few weeks.


This stew was delicious, but contained very simple ingredients. Beef, carrots, celery, red potatoes, peas, flour and beef broth.


I ate my stew with two thin slices of whole wheat toast and butter. The perfect combination!



On a similar note, stew is a very visually unappealing food. I think no matter how it is photographed, it still looks like pig slop.

Question: What are some foods you think look ugly, but taste good nonetheless? Do you find some foods more difficult to photograph than others?

I'm Thankful For...

I'm feeling so happy today that I'd just like to share with you what I am thankful for. (I would encourage you to do the same!)
  • Work promotion - From assistant to supervisor...plus getting the before school program.
  • Health boost - I'm inspired to eat healthier and be more active, and it feels great!
  • New apartment - A clean slate and a fresh start.
  • Everyone in my life - Husband, family, friends, Zekey...I love you all so much!
I'm sure I can keep going for ages, but I would bore you to tears. I think it's really important to focus on the positive and choosing every single day to be a glass-half-full kind of person. You can choose to be happy and choose to be inspired by not only others, but you're OWN LIFE!

I hope that has inspired you to inspire yourself! Now, moving on...

I snacked on some baby carrots throughout the morning with a bit of Sweet Thai Chili sauce for dipping. This combination is out of this world! Try it.



Just after noon (and after the painter left!), I buckled down to make myself some lunch...although it looked more like second breakfast than lunch.

I was so busy cleaning up the apartment that I didn't leave myself much time for cooking. I whipped myself up a quick lunch instead! I used a small whole wheat tortilla wrap, an organic banana, and peanut butter to make a banana wrap. I also made myself three pieces of turkey bacon for added protein.





Yum! This is one of my favourite combinations, recently. The sweetness of the banana peanut butter wrap combined with the salty turkey bacon just hits the spot.

Painter Problems

Good morning friends!

I have some sad news for you all. I don't have any breakfast photos to share with you this morning. Gasp!

The reason?

Well, there is a painter in our apartment touching up our living room ceiling and walls and I am sitting at the dining room table two feet away from him eating my breakfast. I fear whipping out my camera and taking pictures of my breakfast may scare him right back to Russia!


I'm eating two over easy eggs with two slices of extra thin whole wheat toast and butter, along with a cup of mandarin oranges on the side. Talk about yum!

Just picture a beautiful photograph of eggs and toast right here...

I promise, if the painter is finished by noon, I will post some lovely pictures of my lunch. Fingers crossed!

FroYo via The Cemetary

Casey and I didn't have a whole lot of time or energy to put into dinner tonight. We ended up making a bunch of different things and eating them separately. I made a few President's Choice Blue Menu flax breaded chicken fingers by covering them in Frank's Red Hot Thick Sauce and baking them in the oven. I ate my chicken fingers with a bit of light mayonnaise.



You may be thinking I'm weird for dipping my chicken fingers in mayo, but don't judge until you try it! And if you don't like it...try not to judge me anyway.



I also munched on carrots and a bit of last night's pasta after eating my chicken fingers.

After dinner, the three of us decided to walk four kilometers downtown to grab some frozen yogurt. I figured the walk would help burn off the yogurt calories and make for a guilt-free dessert. We even wandered through a huge cemetary en route.


Let me tell you, the long walk was more than worth it! I filled my bowl with tiramisu and vanilla frozen yogurt, and topped it with strawberries, cherries, Skittles, chocolate peanut butter, cookie dough, and a chocolate covered pretzel. Yum!


The entire 8 kilometer trip took us roughly an hour and a half to walk, and the majority of it was very hilly. My glutes sure are going to hurt tomorrow.

I guess that's my cue to hit the sack. Goodnight!

Bring on the Healthy

Another wrap recipe for you! This one is very similar to yesterday's lunch with a few minor modifications.

First, I made myself a big garden salad topped with Kraft Calorie-wise Creamy Poppyseed dressing.





Now comes the wrap! I left out the cheddar cheese today and put the salsa right on the mixed beans. I microwaved the entire thing for a minute and gobbled it all up!




What a delicious lunch! Now it's time to go back to work. Boo!

A Sweet Breakfast Wrap

Good morning!

I was really craving something sweet by the time Zeke and I got back from our half hour walk. I had wraps on the brain ever since I bought a bag of them yesterday. How about a sweet breakfast wrap? Okay!



I made myself a sweet breakfast wrap by spreading some peanut butter over the wrap, then rolling it around an organic banana. Deeelish! 




And for just a little bit more protein to keep me full for the entire morning, I also threw in three pieces of low sodium turkey bacon on the side. I really enjoyed the sweet and savoury combination.

Dog Days

For Zekey, eating can be hard work...



Unlike him, Casey and I always find it enjoyable to sit down to a nice meal together! Tonight, we made up tortellini with a rose sauce and chicken meatballs (on the side for me) with a garden salad on the side.


I ate my meatballs on the side so I could load them up with Frank's RedHot Sauce, the thick kind!



Always trying to squeeze in veggies!



After dinner, I headed out to the barn to ride for a while. I really love the new horse I've been riding! She's such a sweetheart and I feel like there is a bond forming between us. I hope we can stay buds for a long time!

Timeless Burritos

I call them "Timeless" Burritos because they are ready in literally no time! I was a bit rushed for lunch today, so I decided to try my hand at microwaved burritos. I used two small whole wheat wraps, grated on a bit of low fat cheddar cheese, and loaded them up with beans. Then, I threw them in the microwave for 30 seconds and voila!



After the fact, I realized that they needed a bit of a flavour kick, so I dipped them in extra chunky salsa.


I also paired my two burritos with cucumber and a bit of Sweet Thai Chili sauce for dipping.


This lunch was extremely delicious and you will likely be seeing it time and time again. Give it a try!
