Breakfast
Zeke and I woke up before the crack of dawn to go out for a little walk before breakfast. I think we were both a little dozey on our way down, but woke up as soon as we spent some time in the fresh air.
I had been wanting to try making french toast out of cinnamon raisin bread for a while, so I decided to make some this morning since I had a little bit of time to kill. I made two slices of french toast using three egg whites and two slices of cinnamon raisin bread.
This french toast was amazing! I would be more than happy to eat it every week for the rest of my life. Unfortunately, I was pretty full after the first slice and could barely eat any of the second. Nonetheless, it was incredible!
Traffic Jam!
I spent my time waiting for the bus catching up on some super exciting neurobiology readings. Reading about the brain sure does wake you up in the morning...not. My bus was late, so I got in much more reading than anticipated.
The bus was late due to the insane amount of traffic backed up for miles. The bus was over 15 minutes late getting to my stop and then was even more late getting to the college. Fortunately, I take the bus that gets me to school 40 minutes early. I wasn't worried! Just more time to read about the brain.
Lunch
Oh boy, was I ravenous today! I must be feeling better because my appetite was back in full force. I ended up eating half of my lunch as morning snacks (two rice cakes and a Kashi granola bar), leaving me not much else for lunch.
I did still have a container of Greek pasta salad loaded with cucumbers, tomatoes, feta cheese and whole wheat pasta.
And one very big and shiney, but not so tasty apple!
I ended up heading over to Tim Horton's after my little lunch was gone to pick up a muffin. I ordered a low-fat berry muffin to keep my ravenous stomach happy.
Dinner
My wonderful husband had dinner ready on the table when I got home from school tonight. I love having him at home when I have late classes. He cooked us up some Cheesy Tuna Helper, sweet potato medallions, and asparagus. It was all delicious and I enjoyed every last heaping bite!
After dinner, we had some frozen mixed berries with Nesquik Plus Chocolate Syrup drizzled on top. A delicious way to end the day in a healthy--and sweet--way!
Workout
I did manage to get in a bit of a workout today despite getting over this cold. I made it out to the barn to see my lovely Ginny-bean and hop on for a food 40-minute ride. She was very well-behaved today, so we got in lots of fun exercise.
The one downside of having bangs is the funky things they do after being cramped in a sweaty helmet all night. Ooo, crimpy!
Alright, that's all I've got for now! Time to buckle down and do a little bit more work before I head off to bed. Have a lovely night and keep those healthy prayers coming my way. I want to have this cold beat by Thanksgiving weekend!
