Breakfast
Yay, a chance to sleep in this morning! Our morning class today was done online because our teacher is away, so I had the chance to sleep in until...wait for it...8am! It was glorious! I was also able to take Zeke on a nice long walk around the neighbourhood and enjoyed all of the colours of fall.
When I got home, I made myself some eggy oatmeal for breakfast. I used two egg whites, one and a half packets of Quaker Maple & Brown Sugar Oatmeal, and half a tablespoon of ground flaxseed.
I also had a cup of almond milk on the side.
Lunch
I didn't think my day through very well and ended up stranded at school with nothing to eat. I ordered a sub from Subway instead of starving my way through class. I had a 6-inch turkey sub on whole wheat with swiss cheese, tomatoes, lettuce, pickles, cucumbers and sweet onion sauce.
I also enjoyed a very delicious cupcake made by my teacher while eating my sub and watching a movie in class. Best class ever!
Afternoon Snack
After I got home from school, I knew I would need a snack to get me through the long night ahead. I had some homework to finish, then I was heading off to do some respite work for the evening. I ate a small bowl of field berry Greek yogurt before heading off to do respite.
Dinner
Fortunately, respite didn't go too long tonight so I was still able to enjoy a normal dinner just a little bit later than usual. We tried out some PC Blue Menu Chicken Pie for dinner along with some asparagus.
The chicken pie was actually pretty good! It tasted like a light chicken strew with a bit of mashed potatoes on top. It was an excellent, easy meal when we were in a crunch for time.
Workout
Due to my late night and respite work after class, I didn't have a chance to fit in a workout today. That's okay because I'm still really sore from my rides yesterday. Looks like I'll have to bring my study notes along with me to the gym tomorrow to get in a good workout!
