Breakfast
What a crazy day! I didn't get to bed until well past 2am last night because I was up late working on an assignment. If that wasn't bad enough, I had to be up at 6:30am this morning to get ready for class. Yikes!
I made myself a quick bowl of eggy oatmeal for breakfast. I combined one and a half packets of Quaker Maple and Brown Sugar Instant Oatmeal with two egg whites, one tablespoon of flaxseed, and a splash of milk before microwaving it for 2 minutes.
Zeke felt like being particularly cute after our walk this morning and made it extremely difficult to leave for school. How could you leave such an adorable face?
Lunch
I was in a bit of a rush for making lunch this morning as well, so I threw together an easy meal that turned out to be more than filling. I had some Bush's Vegetarian Sweet and Spicy Brown Beans, a container of Liberte Greek yogurt, and half a cucumber with sweet Thai chili sauce for dipping.
Dinner
Another night of late class means Casey had dinner ready for me when I got home. What a sweetheart! We decided to try out this super easy recipe from a Club House spice kit.
We made Cran-Apple & Sage Pork Chops following this recipe exactly...
They turned out delicious! They were a little too sage-y for me, so I just scraped off a little bit of the sauce and left the apple slices on top. Next time I think we'll only use half of the recommended amount of sage. Other than that, it was delicious!
We also had some roasted butternut squash on the side with some brown sugar and pepper for seasoning.
Workout
After dinner, I headed off to the gym for the first time in over a week to fit in a good workout while studying for a small test I have tomorrow. I completed a quick 20 minute interval session on the elliptical before doing this upper body routine.
My arms were pretty shakey by the time I was done. It felt so good to be back in the gym again! I really, REALLY need to start carving out time in my day to go to the gym more often because I really do enjoy it!
