Breakfast
I took breakfast on the road this morning! I let myself sleep in later than usual so I could continue the wonderful sleep I had last night. Instead of eating at home, I brought one of my Get Up & Go Muffins and a tea to enjoy before class, while catching up on some reading.
Lunch
I had several important appointments scattered throughout my lunch hour after finishing class. I stopped at home for a quick bite before heading back our for my first meeting. I grabbed some baked whole wheat pita chips (that I baked myself, might I add!) and some roasted red pepper hummus. I had various snacks here and there throughout the rest of my morrning that ended up being lunch.
Dinner
Dinner was a lot more orgaized and calm. I was able to sit down to a nice meal with Casey. I had almost a whole roasted chicken breast with some Thai noodles from the grocery store and a small scoop of Casey's potato salad. Everything was delicious, but I would have wished for more vegetables. We're almost all out of any fresh or frozen vegetables, so this was the best we could do.
Evening Snack
After dinner, a couple friends, Casey and I went out for frozen yogurt at Kiwi Kraze. I filled my bowl with cake batter frozen yogurt topped with cherries, Swedish berries, mini Rolos, white chocolate chips and sprinkles. It was incredible and the cake batter frozen yogurt definitely stole the show!
Workout
After enjoying that delicious frozen yogurt, Casey and I took Zeke for a nice long evening walk. We were out for a good 45 minutes before heading back inside.
I also managed to hit the gym today and even get in some reading while I was there! I did 30 minutes on the elliptical doing some interval work. I alternated between high speed/low intensity and low speed/high intensity in 5 minute increments. It was a great cardio portion of my workout! I also did Thursday's Upper Body Workout after my cardio. I didn't want to do much with legs this week because of my race on Sunday, so I decided that the elliptical workout and horseback riding this week was enough for my legs.
I should get to bed now though because I have to be up early tomorrow to see my Ginnybean before work. Tomorrow is going to be a pretty busy day and I'm hoping to fit some homework in somewhere. I have lots to still work on this weekend despite my busy schedule.
