Breakfast
I tried out a new recipe for breakfast this morning! Casey and I were both craving pancakes after a late movie night last night, but we didn't have any mix. Not a problem! I made my own pancakes from scratch.
Almond Milk Pancakes
-1 3/4 cup all-purpose or whole wheat flour
-2 tbsp brown sugar
-1 tbsp baking powder
-1/2 tsp salt
-1 1/2 cup almond milk
-2 large eggs
-1 tbsp vegetable oil
Combine dry ingredients in a bowl and mix until any lumps are removed. In a separate bowl, whisk together wet ingredients thoroughly. Add wet ingredients in with the dry ingredients and whisk until everything is combined. Don't whisk too much! Cook pancakes in a frying pan or on a griddle coated with cooking spray until golden brown. Enjoy with your favourite toppings!
These pancakes were pretty fluffy, but they were also a little dense. Not that it was a bad thing! They were super tasty and I loved the subtle hint of brown sugar I could taste.
Lunch
I hung around the house for the entire morning catching up on some readings for school. It was raining out, so our morning hack was cancelled and I could only manage to get in a short walk around the block with Zeke before it started to pour.
Before I knew it, it was time for lunch! I didn't have much time before I had to head off to work, so I made a quick and easy buffalo chicken sandwich. I baked a PC Buffalo Chicken Burger in the oven while toasting two slices of whole wheat bread in the toaster. I topped off my sandwich with a hint of light mayonnaise and lettuce before digging in.
The bread proved to be a little to much for me, so I ended up eating my sandwich open-faced. The meat to bread ratio was much better after I made the switch! Why don't I eat everything open-faced ALL the time?!
Dinner
I headed off to work with a healthy dinner packed to enjoy on break. I brought with me my "go-to" salad that I've been eating a lot of lately. I started with a garden salad mix loaded with veggies, then added some trail mix on top (cranberries, peanuts, raisins, almonds, pumpkin seeds...) and Kraft's Extra Virgin Olive Oil Fig Balsamic salad dressing.
Let me tell you, this is one tasty salad! It's definitely a salad that eats like a meal. It's packed with protein from all of the nuts and seeds, so it will keep you full afterwards.
After I got off work, I made the dreary drive home in the rain. It's been raining all day and I'm pretty sure the forecast is calling for more rain tomorrow. I guess the plants do need the water!
Workout
My workout was non-existant today. Oops! I was going to use my hack as some exercise for the day, but it was cancelled and then I got lazy. I guess leaving the house for work at 12:30pm and not getting home until 10:00pm is a little bit of a deterrent. I just wasn't feeling like working out this morning and I definitely didn't have the energy after being on my feet for 9 hours to put in a good workout. I guess it'll just have to wait until tomorrow!
