Muffins & Hills

Breakfast

I wasn't super hungry when I woke up this morning, but I knew I needed a good breakfast to get me through the day. I whipped up a protein-packed smoothie to bring with me to class and sip on throughout the morning.


I blended up one whole orange, half of a frozen banana, half a scoop of Bodylogix vanilla protein powder, a handful of frozen baby spinach, and some water. The smoothie tasted great, but didn't last very long. I only managed to drink half of it before it went bad during class. Yuck!

 
Lunch

I prepped my lunch the night before so I could have a speedy time getting ready this morning. I had a bag of cucumbers and tomatoes with sweet Thai chili sauce, along with a crab sandwich on a multigrain flatbread.


This lunch definitely satisfied me and kept me full until I got home from school.


Afternoon Snack

When I got home, I had half of a pineapple jumbo freezie before taking a short nap on the couch. It wasn't the best freezie I've ever had, but it still tasted alright.


When I woke up from my nap, I had one of my homemade whole wheat orange muffins. As promised, I made sure to post the recipe so you can all enjoy these delicious muffins!


Orange Yogurt Muffins (adapted from Taste of Home)
-1/2 cup sugar, divided
-2 tablespoons grated orange peel
-2 tablespoons water
-5 tablespoons butter or margarine
-2 cups whole wheat flour
-1 teaspoon baking powder
-1 teaspoon baking soda
-1/2 teaspoon salt
-2 eggs
-3/4 cup plain yogurt
-3/4 cup milk
 
In a small saucepan, combine 1/4 cup sugar, orange peel and water. Cook and stir over low heat for 3-5 minutes or until sugar is dissolved. Add butter; stir until melted. Remove from the heat; set aside. In a large bowl, combine the flour, baking powder, baking soda, salt and remaining sugar. In another bowl, whisk the eggs, yogurt, milk and reserved butter mixture. Stir into dry ingredients just until moistened. Bake at 375° for 13-18 minutes or until a toothpick comes out clean.

Dinner

I wasn't very hungry at dinner time either, but I was still craving something sweet. I sliced up a small sweet potato and baked the medallions in the oven for 20 minutes. I seasoned them with sea salt once they were finished cooking. I also had a bowl of watermelon for even more sweetness!



Workout

Just before I had dinner, I made it out for a 5k run in preparation for my first official race next Sunday.


The run went extremely well! I was impressed at how well I managed to run up the very hilly route I planned out. I was able to run the full 5k without any breaks, instead I took a few slower-paced run breaks to catch my breath after large hills. I felt great after the run and I'm so glad I carved out time to go tonight.
