Breakfast
It's closing in on the end of another week and of course, we're running low on food. So, toast and jam it was this morning! I used two slices of whole wheat bread, topped them with a bit of vegan margarine, then smothered then in "just fruit" peach-apricot jam. Delicious!
Lunch
I packed a lunch bring with me to school today. I brought a big salad filled with lots of hidden cucumber slices, then topped it off with trail mix and a fig balsamic vinaigrette. I also had an apple on the side and a coconut Larabar that served as both my morning snack and lunch.
When I got home from school, I was feeling like doing a bit of baking...healthy baking, that is! I tried out a mixture of a few muffin recipes I found online and it ended up turning out great!
Get Up and Go Muffins
-2 cups whole wheat flour
-1 1/4 cups brown sugar or sweetener alternative
-1 tsp baking soda
-1 tsp baking powder
-2 tsp cinnamon
-1/2 tsp salt
-1/4 cup ground flaxseed
-1/4 cup whole flaxseed
-2 cups grated carrots
-1 apple, peeled and grated
-1/2 cup unsweetened coconut
-1 egg
-4 egg whites
-1 cup vegetable oil or applesauce alternative
Preheat oven to 350 degrees F. Combine all ingredients in one large bowl and mix well. Distribute evenly into paper muffin cups. Cook for 20 minutes or until the muffin tops start to brown. Enjoy!
These muffins are crazy delicious! I helped myself to one right away. These muffins would made a perfect breakfast on the go since they are so nutritionally dense and filling.
Dinner
Shortly after finishing my muffin-baking adventure, I made dinner for myself. I cooked up some pierogies I found in the back of our freezer by frying them in a small amount of water. I made sure to include some salsa to dip the pierogies in. I also steamed some green and yellow beans on the side.
Workout

Yes, I did post the right picture. I didn't do a think tonight. I had so much homework to do! I managed to do over 100 pages in reading and finish two papers in my late afternoon. I did run around with Zeke for quite a long study break, but I just didn't have time to hit the gym today. Maybe tomorrow?
That's all I have for now! Zeke, Casey and I are going for a nice long walk before calling it a night. Sleep tight!

gosh I feel you! the end of the week is always scraping the bowl for whatever is left in the fridge. yuck
