I had a bit of a chance to sleep in this morning, which is strange since I had school this morning and still slept in longer than I did this entire weekend. I woke up to the bright sunshine and followed suit with some Sun Maid Raisin Cinnamon Swirl Bread.
I made myself two slices of toast with Becel vegan margarine and a very tiny side of PC Lemon Greek Yogurt. It was the last of the yogurt, but I did manage to get a few spoonfuls out!
Unfortunately, I completely forgot to snap any photos of lunch today. It wasn't a very nice lunch and it didn't taste too great either. We were running low on food, so I made up some tricolour rotini pasta with some grilled chicken mixed in. I'm not a pasta fan, so it wasn't my favourite lunch option. I did manage to get plenty of reading done today while I waited for and was on the bus.
When I got home from school, Casey and I headed out for groceries straight away. One of my teachers talked about her nacho obsession today during class which sent me into a healthified nacho frenzy! We picked up all the ingredients to make nachos and did that for dinner.
I used Tostitos Multigrain Tortilla Chips, light old cheddar cheese, extra lean ground turkey, chopped onion, orange bell pepper, and diced tomato. Yum!
I finally made it to the gym today after taking the weekend off. I brought along a textbook to read while I did 30 minutes on the elliptical, followed by my Monday Upper Body Workout.
My arms sure were shakey after this workout. It felt great to get in a good workout again and even accomplish some school work in the process!
