Breakfast
This morning was such a lovely one to wake up to! I made some over easy eggs for Casey and I while he took Zeke out for a pee. For myself, I made one over easy egg with two additional egg whites for extra protein. I also had two thin slices of whole wheat toast and vegan margarine to dip in the runny egg yolk. Yummy!
I was still a little hungry after breakfast, so Casey and I munched away at what was left of our watermelon trough.
Morning Snack
It's so strange being back to living the life of a student again. I have two assignments due on Monday, so I spent all of my day in front of my laptop working away. Of course, I needed a cup of orange pekoe tea to keep me going!
About halfway through the morning, it was time to fuel my body and my mind. I had a bowl of veggie chips that I picked up at the Bulk Barn a few days ago. I bought them thinking they were dried vegetable chips that would be an excellent snack and way to get in extra veggies. Unfortunately, after one bite I realized they were fried, not dried or baked.
I probably won't be buying them again, but in the meantime, they were pretty delicious. Besides, I'm sure they still have some nutritonal quality left in them.
Lunch
After finishing all of one assignment and a good portion of the second, it was time for lunch. I spread a little bit of Frank's Extra Thick Red Hot Sauce on some chicken fingers before baking them in the oven. I also sliced up half of a cucumber on the side with some Sweet Thai Chili sauce to dip them in.
The cucumbers were delicious as usual, but the chicken fingers turned out a little dry. I think next time I'll try adding the hot sauce half way through baking them next time.
Dinner
Unfortunately, dinner went unphotographed tonight. I worked the awkward shift at work tonight that went right through dinner time. I had a few snacks before and after my shift, but no real meal was assembled.
Workout
Just as I missed out on dinner, I also missed out on a good workout today. I had so much work to do that I just didn't have the time to exercise. I know, lousy excuse! I think the next time I have a busy day full of homework, I'll take a quick half-hour break to do a Jillian Michaels DVD or a quick HIIT workout. Sounds like a good plan to me!
