Using Up the Leftovers

This is going to be a quick one! I just finished a long and busy shift, so I'm about ready to fall asleep.

Since our kitchen is running a little low on groceries at the moment, I made a super easy lunch to use up some of the leftovers.


I made a runny egg by frying one whole egg with two egg whites. I topped it with some salt and pepper, then added in a slice of whole wheat toast for dipping.


I also had a bowl of veggies on the side!


After a busy afternoon of work, I was finally able to take my break. I brought a garden salad loaded with veggies, and topped with trail mix (dried cranberries, pumpkin seeds, almonds, pistachios) and fig balsamic vinaigrette.


I did quite a fair amount of snacking today, but they all evaded photographs. I'm hoping to keep my meals a bit more on schedule tomorrow to avoid mindless snacking.
