Have you ever had a migraine or severe headache before? Mine started today during my retail shift in the morning. I frequently get headaches while at that job, possibly due to the air quality, fluorescent lighting, or something of that sort. It started out small, so I didn't think anything of it. By the time I was finished at 2pm, it was a full blown severe headache or migraine!
I'm not positive what the difference is between a migraine and a severe headache. All I know is that I was out of commission for the entire afternoon! I was starving by the time I got home, so I made a bowl of minestrone soup with some Ritz crackers. I ate about half of it before heading to bed with the curtains pulled shut.
By the time Casey got home, I was feeling better. We both made up a delicious dinner to enjoy together--roasted vegetables and cannelloni.
The cannelloni that we bought pre-made from the grocery store was stuffed with ricotta cheese and spinach. We topped them off with some garlic pasta sauce and a hint of parmasean cheese.
We roasted up lots of brussel sprouts and asparagus by mixing them in a bowl with a bit of extra virgin olive oil and seasoning them with sea salt and pepper before roasting them in the oven at 350 degrees for 25 minutes.
Shortly after dinner, I was craving a little something sweet. I decided to make a protein-packed bedtime snack to keep me full for the remainder of the night.
Vanilla Protein Cheesecake
-1 packet of Stevia
-1/2 scoop of vanilla protein powder
-1 tsp unsweetened almond milk (or milk of choice)
-1/4 cup light cream cheese
Combine all ingredients in a small bowl until all lumps are gone. That's it! Enjoy over a bowl of berries or other fruit, with granola, or experiment with your own ideas.
This was a very tasty dessert that was healthy too! I know with this little protein boost I'll be set for the night and won't be hungry until morning.
I'm taking today as an active rest day to recover from all of the walking I did this past weekend and the intense leg day I did on Thursday. If you're looking to fit in a sweaty workout before the day is over, try out this Plyometric Countdown I created last week!
