I hope you've all had a great Thursday. Mine was busy, but full of fun! I love hanging out with the little kiddos and being in a JK/SK summer program is even better. Typically, I work with kids who are in grade one to grade six, so a younger bunch is refreshing.
Unfortunately, my fresh rolls that I prepped last night weren't exactly fresh by the time I ate them today for lunch. The moisture left in the rice paper caused the veggies inside to mush together, while the rice paper itself started to dry out and crack. I tried to eat one, but stopped halfway. Yuck! I did manage to eat my whole salad and waited for my break to make a run to Tim Horton's for the rest of lunch.
I ended up buying a small iced coffee made with milk and a cranberry blueberry bran muffin. The muffin was delicious and very moist. I don't typically like buying muffins because they're high in fat, sugar and calories, but I didn't have much of a choice. The Tim Horton's I found close to the school was small and didn't have many options to choose from. Oh well.
After work, Casey and I cooked up a storm in the kitchen. I was craving Pad Thai, so we decided to make some at home.
We cooked up some rice noodles with Pad Thai sauce and stir fried some veggies to throw in with the noodles. This portion may look small, but it filled me up SO much!
I waited about an hour after dinner before satisfying my sweet tooth with a bit of dessert. I made my usual frozen mixed berries with a Nesquik Plus chocolate drizzle on top.
I'm just about to head out for a 5k run before stopped at the gym to fit in a chest and abs workout as indicated on my latest workout schedule.
I'm loving doing cardio in the form of a run outside, then stopping in to the gym to finish off with some strength training!

I hate when my rolls dry out! I usually wrap them in a damp paper towel and they can easily last until the next day's lunch without drying out!
