First, I made mysef some spinach and feta spanikapita in the oven. I needed something small to eat before my riding lesson and spanikapita seemed to be just right.
I also had a very small bowl of frozen mixed berries on the side with a Nesquik Plus chocolate drizzle.
I headed out for yet another excellent riding lesson filled with plenty of learning opportunities. I was pretty hungry when I got back, so I threw together some apple slices and mozzarella cheese to munch on while I blogged.
I'm just finishing them up right now, actually!
Tomorrow is another busy one because I work right through lunch blogging. I'll do my best to take pictures and post them as best I can!
