Bring On Ribfest

Hello everyone!

My apologies for going missing today. Call it a lack of judgement, but I set my alarm without giving myself enough time to blog this morning. I just needed a little bit of extra sleep to prepare for a busy day of work today with our field trip to a pool and splash pad.

I had just enough time to heat up one and a half packets of apple cinnamon instant oatmeal in the microwave after adding two egg whites and a splash of water to the dry mix.



I had prepared by lunch the night before so all I had to do was throw it all in my PackIt and I was ready to go! I had a mason jar filled with egg salad (one whole hard boiled egg, two hard boiled egg whites, lettuce, one diced pickle and a tiny bit of chopped red onion), an apple with mozzarella cheese, and two Rustic Flatbread multiseed crackers.


I also brought a big bottle of iced lemon water with me to drink during our trip to the splash pad.


After work, Casey and I were itching to go to Ribfest for dinner. We tried out Jack the Ribber this year because of their award-winning sauce.



I ordered a pulled pork sandwich for dinner...



...and Casey ordered a full rack of ribs. I ended up eating half of my sandwich while Casey ate half of his ribs, then let Casey finish the rest of my sandwich. We brought home the lack half rack of ribs to save for Casey's lunch tomorrow.


Everything was fantastic and I think that was the best, sweetest pulled pork I've ever had in my life. I wish I had a bigger stomach because I wanted to eat more.

After about a half hour of walking around to see all the vendors, we sat down again for some dessert. I ordered a hot fudge sundae with the best soft serve vanilla ice cream I've ever had. Casey had a cinnamon sugar funnel cake that seemed to evade the camera!


I'm absolutely stuffed, but I think I'll give myself an hour or so to digest before hitting the gym. I want to get in some cardio and leg work today...because I'm schedule to, not just to burn off my Ribfest dinner. I swear, I'm actually really looking forward to hitting the gym!

Time to get my sweat on.
