First and foremost, I'd like to thank everyone for the lovely birthday wishes I've received! It's so nice to hear kind words, especially after such a stressful week last week.
Aside from it being my birthday, today has been nothing out of the ordinary. I was able to spend time with my love, Ginny, after teaching riding lessons to some pretty adorable kiddies!
I had a very late lunch after spending all of my morning and early afternoon at the barn. I made myself some egg salad along with a gigantic salad.
I used one whole hard boiled egg, two hard boiled egg whites and a hint of mayonnaise to make my egg salad. I also topped some Very Veggie salad mix with some trail mix and fig balsamic vinaigrette salad dressing to make my salad.
I rushed off to work for the evening where I ate an apple and a small handful of roasted almonds for my afternoon snack. By the time I was finished work, I was starving! It was 10pm and I still hadn't had dinner. I stopped by the grocery store on the way home to pick up some ingredients for "healthified" nachos. I only really call them healthified to make myself feel a little better for indulging in a plateful at 10pm!
I used restaurant-style nacho chips because I had no luck finding any organic or baked tortilla chips at the small grocery store I visited on my way home from work. I topped the nachos with light old cheddar cheese, plenty of diced red onion and orange bell pepper, and grilled chicken for protein.
Casey and I munched away at our super late dinner as I blogged away!
Today has been a pretty busy birthday, but I have tomorrow off to relax and unwind. I should still try to get some sleep, nonetheless!
