First, let's rewind to lunchtime. I was in a time crunch after work today because I had to pick up my student card from the college before a certain time. I made myself a super quick egg salad sandwich to use up some hard boiled eggs we had hanging out in our fridge.
Zekey was not impressed by all of my rushing around and not paying attention to him!
I mixed up one hard boiled egg and one hard boiled egg white with about half a tablespoon of light mayonnaise. Then, I threw it all on two slices of whole wheat bread with some tomatoes and lettuce. Voila, egg salad sandwich to go!
After picking up Casey from work, I had my student card and bus pass in no time. The entire process took only 20 minutes and gave us some time to tour the campus before my first day of classes on Tuesday.
When we finally made it back home, we were both pretty hungry! Fortunately, we had all of the ingredients to make a delicious Pad Thai. I used scrambled eggs, broccoli and a bit of chicken breast in my Pad Thai. It was deeelish!
After dinner, I enjoyed some quality time with Casey, Zeke and a hot cup of tea!
I have plans to head out to the gym a little later tonight. I haven't had a solid gym workout since before our camping trip this weekend, so it might be time to do a full upper body workout. (My legs are still tired from my run and riding yesterday!)
Here is the routine I plan on doing tonight. I'm expecting some pretty shakey arms after this workout!
