Good morning! Today is my first shift as supply staff for the full-day summer program. I am supplying for someone who is on vacation all week, so I will be at this school until Friday. They are an assistant to a child with special needs, so it's right up my alley! Fortunately, they only work half days so I'm not too overwhelmed starting off with 8 hour shifts right off the bat.
I wasn't sure whether or not I'd be getting a lunch since my shifts this week are only 5 hours each, so I made myself a very filling breakfast to last me the morning. I made myself a bowl of large flake oatmeal and added in the last little bit of my mixed grains hot cereal from last week.
I also added in about half a cup of egg whites for added protein before heating it all up in the microwave.
This oatmeal should keep me full for a long time. I'm stuffed!
