Lunch came in the form of a few snacks today. We ate breakfast a bit late, then headed out to see a movie right in the middle of lunchtime. Instead of eating an entire meal when I wasn't hungry or starving my way through a movie then pigging out afterwards, I split lunch into two parts.
First, I made a banana cream cheese wrap for my first part of lunch. I used half of a banana and a tablespoon of light cream cheese on a small whole wheat wrap. Then, it was off to the movies!
Casey and I went to see the movie Prometheus. It was a pretty good movie! I like science fiction/action movies, as does Casey, so we were a bit partial to this type of film. Casey is a big fan of the Alien movie series, so he understood a bit more of this movie than I did. I've only seen Alien Resurrection and that was a long time ago. For not having watched Alien, I still enjoyed this movie and enjoyed the questions it left me with after the movie had ended.
When we got home from the movie, we immediately took our little suck for a walk. We were out for about 30 minutes, but it was a rather sweaty 30 minutes. This humidity is killer!
I had a snack or part 2 of my lunch right before our walk--apple slices and extra old cheddar cheese. Yum!
A few hours after our walk, it was time for dinner! We had some delicious pasta waiting to be cooked, so we decided to use that for dinner. We cooked up some roasted red pepper medallions stuffed with butternut squash and roasted some brussel sprouts on the side.
After cutting the brussel sprouts in half, I seasoned them with extra virgin olive oil and sea salt. Then, I cooked them in the oven at 425 degrees for about 25 minutes until they were just starting to brown or caramelize. Cooked to perfection! Despite their burnt look, they actually taste incredible and not burnt at all.
The pasta was pretty good as well! I love butternut squash pasta, especially with a sweet garlic pasta sauce and goat's cheese. Unfortunately, we don't eat goat cheese enough to warrant buying a bunch of it just to eat every so often. Oh well, the pasta was delicious all the same!
For dessert, we ate some frozen berries with Nesquik Plus chocolate syrup. I ate roughly 1/2 cup of frozen berries with half a tablespoon of chocolate syrup. What a delicious way to end the day!
Now it's time for me to hop off to the gym to get in a good sweat session before relaxing for the night!
