Wow, what a great day! Despite having to work on a Sunday, my shift went by pretty quickly. I had a medium sugar-free vanilla iced coffee make with milk plus a cherry Larabar during my shift.
When I got home from work, I decided to put on my workout gear and head out for a run. I wasn't able to fit in two runs last week, so I wanted to be sure to get my runs in early this week.
I wasn't expecting a particularly fast run as it had been quite a while since I had my last meal, it was still really hot outside and I was pretty tired from work. To say I was pleasantly surprised would be a huge understatement when I ended up running my fastest 5k EVER!!!
I sure was one happy girl by the time I got back home! I was even happier when I saw that Casey had the ingredients for a taco dinner all ready for us to eat...
...including a few tomatoes picked from our very own tomato plant!
I made taco salad instead of regular tacos by filling up my plate with lettuce, ground lean turkey, diced tomato, cheddar cheese and salsa.
My stomach was grumbling after my run, so I had no problem polishing off my plate in no time. It was incredibly delicious and tasted even better knowing I worked hard for it!
After dinner, I made myself a healthified dessert of frozen mixed berries with a Nesquik Plus Chocolate Syrup drizzle on top.
I'm pretty exhausted and will likely be in bed early tonight. I'm really happy with my day today and my weekend in general. I'm looking forward to a great week ahead!
