Riding the Healthy Train

I'm feeling great today! I slept really well last night and have loads of energy today. I made it to the gym shortly after my morning post to fit in a 5k run. It was a slow one, but my legs were pretty tired from my intense show jumping lesson last night. I'm just glad I pushed myself to do it and finish 5k without stopping. Hooray!

Right after the gym, I headed home to pick up Zeke and take him for a 40-minute walk. I must say, it felt great going for a long walk right after the run. It helped my legs cool down and prevent stiffness.

When I got home from the walk, it was time for lunch. I made myself an egg salad sandwich and a baked microwaved sweet potato.


I made my egg salad using one whole hard-boiled egg and one hard-boiled egg white, and about half a tablespoon of light mayonnaise. I topped my slice of ancient grains bread with some sprouts, about a quarter of an avocado, then finally my egg salad. It was delicious!


I also ate about half of this microwaved sweet potato before giving up. It was pretty huge and I was just too full to eat the entire thing comfortably.


I ended my meal with a tablespoon of dark chocolate chips to satisfy my sweet tooth and reap the benefits of dark chocolate. Yum!


So far today has been off-the-charts healthy! I feel great and I hope these days just keep on coming.

Question: Do you often have super healthy days where you feel like you could do anything? How do you create this feeling out of days that aren't so great?
