I had an extra hour between my midday job and the after school program, so I came home to make my lunch. I cut myself two thin slices of sourdough bread and topped them with some tuna salad.
I used a whole can of tuna with a hint of mayonnaise to moisten it up a little bit. It turned out to be a lot of food, so I ended up eating only one piece of bread with tuna and left the other half for later.
I also had some steamed edamame on the side with a bit of sea salt. Yum! I know I'm getting plenty of protein compared to earlier this year simply by the amount of edamame I've started eating. I'm obsessed!
Zeke was very happy to have me come home for lunch. We went out for another half-hour walk in the cool air. He was one super happy puppy!
Alright, now back to work! I'm heading straight to teach therapeutic riding lessons after program today, so I'm packing dinner to bring with me. I'm also finally able to ride Ginny again for the first time since last Tuesday. Last week was a very busy week, so I could only ride her once. I'm really looking forward to see her again!
