I didn't leave myself very much time to make lunch today, so I made everything quickly. I reheated three feta and spinach spanikopitas that Casey had last night for dinner in the microwave.
I also steamed myself a bag of edamame using the microwave.
I also seasoned them with sea salt. Yum!
Finally, I ate two mini low-fat bran muffins...one at lunch and one as an afternoon snack. I buttered the one I had at lunch, but left the second unbuttered. These muffins were so good they didn't nead anything extra!
Now I'm off to work then straight to my CPR recertification. Wish me luck!
