Odds 'n' Ends

Dinner was a mash up of a few odds and ends we had hanging around the house. One chicken breast, four small whole wheat tortilla shells in the freezer, a bit of fat free sour cream, and some salsa. What to make with such an assortment of foods? Chicken quesadillas!


I shredded up half of a chicken breast onto one small whole wheat tortilla shell, covered it in a small amount of shredded cheddar cheese, popped a second small tortilla shell on top and threw in all in the oven. Multiple that by two--one for me, one for Casey--and you've got dinner!


I really enjoyed the amount of shredded chicken in my tortilla with just enough cheese to hold it all together.


I also cooked up a heaping pile of edamame to enjoy on the side. I think this may be my new favourite vegetable!


After dinner, I headed out to ride Ginny; however, our ride was cut a bit short due to the approaching thunderstorm. I had just finished up when it started to pour. It was a pretty nasty storm that lasted a whole 15 minutes before clearing up completely. I'm glad I was able to fit in a good ride though.
