Lunch and Dinner

I took photos of lunch today, but forgot to post about it. That happens more times than it ever should. Lunch was an odd combination. I was craving both coleslaw and French toast.

First, I had a bowl of coleslaw with Remark Fresh Market dressing.

That sure satisfied my vegetable quota for that meal!

I was also craving French toast, so I made myself two slices of whole wheat French toast using only egg whites. I'm too wary to make it with almond milk yet and we don't have any milk.

This French toast was delicious! My cravings were satisfied.

For dinner, I made a pork tenderloin and a side of vegetables in the slow cooker. It took roughly 8 hours to cook, but it was well worth the wait.

I topped my pork tenderloin with a bit of President's Choice Smokin' Stampede barbeque sauce.

The vegetables tasted like the pork seasoning and were delicious on their own. I had some red potatoes, baby carrots, and onions.

My first experience with a slow cooker was a success! There are so many other recipes I'd like to try. Next up...pulled pork in the slow cooker.

Now I'm off to the barn to see my little Ginny!
