I was looking forward to Monday rolling around so I could get back into my groove of healthy eating. This morning's breakfast did not disappoint!
I made myself a bowl of protein-packed soaked oats by adding two egg whites to my usual large-flaked soaked oats. I topped my oatmeal with just the tiniest squirt of agave nectar and lots of chia seeds. I also threw in a juicy mandarin orange on the side.
This breakfast hit the spot! I had worked up an appetite packing for the big move this morning, so I needed a breakfast with some substance. Protein-packed oats really did the trick.
I made a pretty big dent in packing this morning, but we still have a long way to go and less than one week to do it all.
Since I don't work until the After School Program, I plan on spending most of my day packing up as much as I can so we can start moving things into the new apartment. I'd much rather move in stages than move all at once. It makes moving seem much more manageable.
I'm off to take Zeke for a super long walk. I'm loving this weather and I'd like to spend as much time outside as I possibly can. Zeke is itching to get outside as well.
