Inspired by my couch potato state, I tried my hand at the super simple sweet potato and baked beans recipe I found ages ago at Healthy Tipping Point. All you have to do is cut a sweet potato in half, microwave it until it's cooked all the way through, microwave baked beans and put them on top of the sweet potato. Viola!
