Revamping an Old Favourite

I've decided to make a small change on one of my all time favourite foods: banana pancakes! I was driving home from volunteering this evening and suddenly it popped into my head. How to make pancakes easily portable? Simple. Make them round instead of flat. And thus, banana pancake muffins were created!

Banana Pancake Muffins
- 2 cups 5 Grain Pancake Mix
- 2 bananas
- 4 egg whites
- water
- chopped walnuts

Preheat oven to 425 degrees Farenheit. Mash bananas in a large mixing bowl to desired consistency. (I prefer big chunks of banana in my muffins!) Add pancake mix and egg whites. Mix thoroughly. Add water until mixture reaches the consistency of thick pancake batter. Portion out mixture into a muffin tray. Sprinkle chopped walnuts on top. Bake for 10 to 15 minutes. Cool and serve. Add syrup on top of eat plain. Makes 12 muffins.

Where in the World Is Bee?

I am so sorry for being so absent over the past few days. I promise I will be back soon to share some delicious new recipes with you! I've tried a few quick recipes over the past few days and I think you're going to love them.

So what have I been up to? Well, aside from studying my behind off, I've been working in the psychology research lab analyzing data for my honours thesis. Yikes! This is the dungeon where I am being held captive.

Priorities

Hello hello! Sorry I've been missing for the past day or two. Unfortunately, this is a really crazy week for me midterm-wise. I won't be able to post as frequently as I normally so, but I'll try my best to post at least once every few days to let you know I'm still alive!

I hope you've all doing well! Enjoy every bite of your delicious meals knowing I'm back in student mode with mealtime staples such as cereal, quick rice and fruit. Sigh!

A New Friend

I've been on lockdown mode today. I missed my afternoon class to study for an exam I will be writing tomorrow. I didn't even realize how insane my desk must look until a moment ago when I decided to snap a picture to show you. Brace yourself...

Don't worry, I'm actually terrified of spiders. I'm surprised I could get close enough for a decent picture. But he hasn't moved or bothered me all day, so I'm going to let him hang out with me for a while. I'll probably take him outside later on.

Lunch was provided by my wonderful fiance! I wanted something quick and "dirty", so he made me macaroni and cheese. Healthy Life Choices Organic Macaroni and Cheese. So yum!

Making Banana Pancakes

Good morning! My apologies for the lack of post yesterday. It's been a very busy week for me because of exams and thesis work all piling up. Don't worry, there was nothing exciting to post about anyway. My meals were primary snacks, fruit, cereal and whatever else I could whip up in ten seconds or less!

Now onto today. I wanted to get started this morning on the right foot. What better way to start your morning than with grilled banana pancakes?

They were easy to make. Just prepare pancake mix of your choice (mine is 5 whole grain mix), pour one pancake into the frying pan and add your sliced bananas to the top. Don't cover them with more mix or bury them because they need to touch the pan in order to get that "grilled" taste.

I Wanna Rock Right Now

Yesterday morning's spin class was IN-TENSE! I pushed myself harder then I usually do and it paid off. I felt wonderful! Spin is one of those activities that makes me want to DIE until it's over and then I feel incredible!

I enjoyed a bowl of something special for breakfast. Pina Colada Oatmeal!! Just add diced fresh pineapple and unsweetened coconut shavings to a bowl of old fashioned oats and you've got a little bit of tropical heaven!

Lunch was dispersed between my own food and free food! A student's favourite word, remember? My program was holding a free wine and cheese for all students, so I filled up on assorted cheeses, crackers, fruit and veggies. I also had a Kashi Pumpkin Pie granola bar and an apple throughout the day.
Dinner was a recreation of last night's buffalo chicken sandwich.

Up and Running

I've been having such bad luck with my blog and photos recently! I hope I've sorted out all the kinks and posting can be much easier.

Breakfast this morning went unphotographed because it was simply too unphotogenic. I made the usual oatmeal with peanutbutter and I added a mashed to it. Mmm!

I had an apple for an afternoon snack and made myself a gigantic lunch to fill my empty belly. I made a sweet turkey chili sandwich using last night's Sweet Thai Chili sauce as the dressing. I also helped myself to a heaping side of coleslaw.

In the afternoon, I decided to give these little babies a test run. I saw them on sale at the grocery store and they really caught my eye. They're strawberry flavoured rice crisps. Yes...they are baby food! Don't laugh. They're so tasty! I used a tiny smear of vanilla icing and it made them taste like strawberry wafer cookies. At only 10 calories a piece, I can indulge and not feel guilty. I've had six today!

For dinner, I was able to put another new sauce to use. Frank's Red Hot Buffalo Wing sauce. Pardon me while I wipe up my drool. I made a buffalo chicken sandwich using a chicken breast drenched in buffalo sauce and lettuce on top, with a side of asparagus.

A Taste of Thai

Lazy Sunday was one way to describe today. I slept in for the first time in weeks after a night of fun with some friends. I woke up super hungry so I made myself a simple breakfast staple: cereal!

My fiance and I went grocery shopping to purchase some kitchen necessities and ingredients that would come in handy for dinner. I had a few samples in the store, so I wasn't very hungry for lunch either. I tried some homemade coleslaw with two fresh slices of caraway rye bread.

The rest of the afternoon consisted of study-note-making and preparing for the week ahead. It's been a challenge because I had a little accident last night. I decided to curl my hair with a straightener using Julie's (Peanut Butter Fingers) tutorial video. It turned out pretty well, but I burnt my thumb in the process. Ouch!

Finally dinnertime rolled around and I could test out my Thai skills! I made fresh rolls for the very first time. They're very easy to make and super nutritious.

-rice paper
-carrot
-cucumber
-shrimp

Dip in Sweet Thai Chili sauce and you've got perfection!
Cut carrot and cucumber into long, thin strips. Remove tails from shrimp. Fill a large flat container with warm water. Take one sheet of rice paper and dip it into the warm water until the entire sheet is completely flimsy, but not enough to tear under your grip. Lay the sheet out flat and put ingredients at one long end. Roll the rice paper around the vegetables as you would a wrap. Let sit for 5 minutes until the rice paper is sticky enough to hold together. Enjoy with a side of Sweet Thai Chili sauce for dipping.

On a side note, I took pictures today using two different memory cards. The one card seems to be working, but the other is not. I'll try and get the pictures off of it; my apologies if I can't.

Building a Better Blog

I've been having this problem with Blogger for a while now where I can't add captions to my pictures. It's been a real pain in the behind, but I think I just found a solution! Instead of adding/editting posts using blogger.com, I need to use Blogger Draft.

So much easier to use! So many more options! So much better!!

Let's give it a try, shall we?

Running Late

No, not me! My Sleek and Strong instructor. The regular instructor is away on vacation for the next two and a half weeks, so we have a temp filling in for her. I guess she missed the bus today and was 20 minutes late for class. Sleek and Strong was cut in half, but she made us work for it! I probably got a better workout in that half an hour than I do in the usual 50 minute classes.

Sorry I didn't post dinner last night. It was super simple! Barbeque chicken and asparagus. Yum!


Breakfast this morning (which I prepped and photographed yesterday) was my first attempt at Kath's famous Overnight Oats. I must say, I was skeptical at first but I actually enjoyed them! Next time I'd like to try peanut butter banana.






Now I must read and make some progress on a paper before my 12:30 class.

A Spin-less Morning

Good morning!

I didn't post dinner last night for one reason...I didn't really have a dinner. I did eat, but dinner consisted of a piece of imitation crab before heading out to volunteer, an egg and two pieces of extra thin toast when I got back, and a small garden salad around midnight. It was a busy night!

I stayed out late last night, so I decided to skip spin class this morning. Something about going to sleep at 1:30am and waking up at 5:00am didn't sound too appealing.

Instead, I slept in and made myself a bowl of steel cut oats with egg whites and peanut butter. It was a very filling breakfast!



Lunch was a fun "Hawiian salad" (aka pineapple and ham) along with some rosemary and olive oil baguette bites. Lunch was small because I had a few pieces of luncheon sandwiches for free at school.
