Healthy as a Horse

I woke up this morning feeling excellent and contemplating what I wanted to create for breakfast. I knew I had a banana in the pantry that was starting to brown, so I wanted to use it up. What a lucky coincidence that the song Banana Pancakes by Jack Johnson was on while I was in the shower this morning. I decided to mash up the banana and add it to my usual 10 grain pancake recipe (thanks Bob)!

I cut the usual recipe in half to make one serving: 1/2 cup pancake mix, 1/2 egg, 1/2 cup water and 1 mashed banana. I also sprinkled some crushed walnuts and chia seeds on top before adding the lite pancake syrup.

This breakfast sure was filling! I don't think I'll be hungry again for another four or five hours.

Oh, and don't forget my two chewable multivitamins! These little guys are delicious, but considerably more expensive than multivitamin pills. I don't know if I can afford to keep buying them, but for now they're a nice treat.

Yum, those pancakes look delicious! I love walnuts :) I've seen those gummi multivitamins before, but they were so expensive I couldn't justify buying them, but maybe someday I'll get to try them.

Also, I have the same container that you have your chia seeds in, but mine have yellow tops :) Dollar stores rule!

@Callie @ Callieflower Kitchen I think next time I make banana pancakes I might include the walnuts right in the mix. They were a bit too hard for my liking, but cooking them in the batter might soften them up a bit. Dollar store = student heaven!
